Combine all ingredients in a saucepan over medium heat, stirring until the sugar dissolves. Bring just to the boiling point, then reduce the heat to low. Cover and simmer to blend the flavors, about 10 minutes. Strain and serve. Great with cookies after a night of trick-or-treating! (Serves 6 to 8.)
Heat oven to 350 degrees F. Grease a medium-sized cookie sheet (or spray with vegetable oil spray). Beat together the banana, oil, vanilla, eggs, and milk in a bowl until creamy. Add flour, cocoa powder, and baking soda and blend. Stir in chopped nuts and rolled oats and mix well. Drop by large serving spoons onto cookie sheet to make giant cookies. Bake for 10 to 12 minutes, until just firm to the touch. Cool and serve. These may be stored in refrigerator in an airtight container or frozen until ready to use. Enjoy!
