Spinach Soufflé (serves 4) 3 Tbsp. flour 3 Tbsp. butter, melted 1/2 tsp. salt 1 pint cottage cheese 3 eggs, lightly beaten 6 oz. cheddar, shredded 1 (10 oz.) pkg. frozen spinach, thawed Preheat oven to 350°.
