Lentil soup
Serves 3-4
Ingredients
75g/3oz lentils
1 large carrot
1 onion
1 medium potato
½ a small turnip or swede
1 celery stalk (optional)
40g/1½ margarine
750ml/1½ pts.water
chicken stock cube
Salt and pepper
Chopped parsley
Method
Wash the lentils in a sieve and drain slice the carrot. onion
thinly slice.the carrot, onion, celery cut the potatoes and turnip into small dice
melt the margarine in a large pan and fry the vegetables for 5 minutes add the lentils, pour in the water, stock cube salt and pepper bring to boil stirring , lower the heat and cover
simmer very gently for 1 hour liquidize or sieve, and check the flavour
Serve hot, sprinkled with chopped parsley
