Onion soup
Serves 3-4
Ingredients
500g/1lb onions
15g/½ oz.dripping or margarine
1 medium sized potato
750ml/1½ pts water
1 chicken stock cube
Salt and pepper
Chopped parsley

Peel and roughly chop the onions and potato
melt the dripping in a fairly large pan and gently fry the vegetables for 10 minutes, stirring occasionally
add the water, stock cube, salt, and pepper and bring to the boil. Simmer with the lid on for about 50 minutes until cooked
put into a blender and run for a few seconds until smooth (or sieve) Check the seasoning Reheat if necessary
Serve in a warm soup tureen, garnished with chopped parsley
