Fish and cheese sauce
Serve 2-3
Ingredients
Sauce
250ml/ ½ pt. milk
25g/ 1oz plain flour
25g/loz margarine
salt pepper
pinch of mustard
100g/ 4 oz. cheese
250g/ ½ white fish
Small packet instant potato (optional)
Parsley to garnish
Method
Wash the fish, place it between two plates and steam it over a pan of simmering
water until cooked (about 15 minutes)
grate the cheese make up the instant potato if you are using it
put the sauce ingredients into a pan bring to the boil whisking all the time Simmer for 2-3 minutes until thick stir in half the cheese
when the fish is cooked, place it in a shallow ovenproof dish, pour the sauce over, sprinkle the rest of the cheese on top,p ipe the potatoes around the edge, either grill under a medium heat, or place near the top of a hot oven until golden brown, garnish with the sprig of parsley
Serve with creamed potatoes and another vegetable
