Food for the Spirit AND the Body! |
The Wonders of the World In a geography class, the teacher was discussing the wonders of the world. Since there are several lists (ancient, modern, natural), she asked the students to each compile their own lists of the seven greatest wonders of the world. While there were many variations, these were the ones most commonly picked: 1. The Great Pyramids of Egypt 2. The Taj Mahal 3. The Grand Canyon 4. The Panama Canal 5. The Empire State Building 6. St. Peter's Basilica 7. The Great Wall of China While gathering the votes the teacher noticed that one student, a quiet little girl, hadn't handed in her paper yet. When asked if she needed help with her list, the girl responded: "Well, yes, I do. I can't make up my mind. There are just so many of them..." The teacher asked her to read aloud what she already had and perhaps the class could help her. The little girl hesitated, then read: 1. to touch 2. to see 3. to taste 4. to hear 5. to feel 6. to laugh 7. to love The silence in the classroom was deafening. And the little girl's list was voted the Seven Greatest Wonders of the World. In our quest to find the great truths of our lives, let us not overlook the little, daily ones. |

Chicken Pot Pie Serves 6; Preparation time 15 minutes; Cooking time 50 minutes; level of difficulty - moderate Ingredients 1 LB boneless, skinless chicken breasts, 4-4 oz pieces 2 cup water 1/2 cup wine, dry white 2 average chicken bouillon cubes, crumbled 2 medium carrots, chopped 1 cup frozen green peas 2 Tbsp olive oil 1 medium onion, chopped 3 TBSP white all-purpose flour 5 oz fat-free evaporated milk 15-1/4 oz canned white corn, drained 6 pieces phyllo dough Instructions Place chicken, water, wine and bouillon cubes in a medium pan. Bring to a boil, lower heat and cook gently, uncovered for 15 min. Remove from heat and allow to cool. Set aside 1 C of broth and chop chicken into chunks. Preheat oven to 400ºF (200ºC). Coat a deep 8-inch pie pan with cooking spray. Microwave carrots and peas for 2 min. Drain. Heat oil in a medium nonstick pan, add onions and cook until soft. Stir in flour and cook over low heat for 2 minutes. Remove pan from heat and stir in milk and reserved broth. Return to heat and cook, stirring, until mixture boils and thickens. Add carrots, peas, chicken and corn. Pour chicken into prepared dish. Layer sheets of phyllo over pie, trim edges and press down firmly to seal. Lightly coat with cooking spray. Bake for 10 min, lower temperature to 350ºF (180ºC) and bake until golden brown, about 20 min more. |
