Myst's Cheese Cake

(Turtle Cheese Cake)

2 cups crushed chocolate cookies or vanilla wafers
1/4 cup butter (melted)
2 1/2 (8 oz.) packages cream cheese (softened)
1 cup sugar
1 1/2 TBS flour
1/4 tsp salt
1 tsp vanilla
3 eggs
2 TBS whipping cream
caramel topping (recipe follows)
chocolate topping (recipe follows)
1 cup chopped toasted pecans

Preheat oven to 450` F.

Combine cookie crumbs and butter, press into bottom of 9 inch springform pan.
Beat cream cheese in large bowl until creamy.
Add sugar, flour, salt, and vanilla, mix well.
Add eggs, one at a time, beating well after each addition.
Blend in cream.
Pour over crust.
Bake ten (10) minutes.
Reduce oven temperature to 200`F.
Continue baking 35 to 40 minutes or until set.
Loosen cake from rim of pan; cool before removing rim of pan.
Drizzle with caramel topping and chocolate topping (Recipes Follow).
Refrigerate Sprinkle with pecans just before serving.

Caramel Topping
Combine 1/2 (14oz) bag caramels and 1/3 cup whipping cream in small saucepan.
Stir over low heat until smooth

Chocolate Topping
Combine 1 (4 oz) package German Sweet Chocolate, 1 tsp butter and 2 TBS whipping cream in small saucepan.
Stir over low heat until smooth.



DIVINITY


2 cups sugar
2 egg whites stiffly beaten
1/2 cup hot water
1/2 cup white syrup
1 cup chopped nuts
1 tsp. vanilla

Cook sugar, water and pinch of salt until hard stage.
Pour slowly over stiffly beaten egg whites.
Continue beating as adding the syrup, slowly and continue beating until it begins to lose it's gloss.
Add nuts and vanilla.
Drop by teaspoon onto wax paper.
Let stand till set.

Turkey Gibblets Dressing



Ingredients:

neck, gizzards, liver, heart of turkey
1 lb. package of turkey gizzards
loaf of hard Italian bread
tops of celery from a whole bunch
5 stalks of celery
2 large or 3 medium onions
2 large pototoes
salt
pepper
poultry seasoning
sage

Procedure:

Neck, gizzards, liver and heart of turkey are cooked (med. high) in water in biggest pan.
Cut up a lot of tops of celery and a little bit of celery and put in this pan.
In second big pan, soak one loaf of HARD Italian bread in luke warm water.
Chop 2 large or 3 medium onions and put in third pan.
From the poultry section, get almost a pound of gibblets.
Remove fat from them and place in first pan and cover.
Cook slow (simmer).
Peel, wash and put in whole 2 large potatoes in first pan and recover.
Take four stalks of celery, cup up fine, and put in third pan.
Meanwhile, the first pan is allowed to simmer until the pototes are fork tender.
Then the potatoes are removed and mashed with fork.
Drain second pan mixture in calinder and squeeze out all the water from the bread and then put back in second pan (add mashed potatoes).
Crack in a small bowl two large eggs (and beat) and add to second pan.
Add contents of third pan to second pan.
Next, allow gibblets to cool, then cut up fine and also add to second pan.
Put broth of first pan into second pan (depending on quantity of broth, you may need to boil it down some so as not to lose any).
Want your dressing moist but not too wet..
Add to taste: salt, pepper, poultry seasoning, and sage.
Sage is added in the smallest amount.
Remember, that the dressing tastes stronger after it sits awhile.
Put in oven with turkey or stuff turkey or both.
If not in bird, cook at turkey temperature for two hours.
The dressing (you can call it stuffing if you want) is a lot of work, but it makes the turkey dinner!

Cornbread Casserole

Ingrediant's
(this is for one 8 by 8 square pan, double as needed)

1 can cream style corn
1 can whole kernal corn (or 3 cups fresh)
1/2 to 1 stick margerine (whatever you what, I use less)
1 8 oz carton of sour cream
2 eggs
1 box jiffy corn muffin mix

Directions

melt butter in casserole dish, beat eggs into butter,add corn and sour cream,mix.
Add corn muffin mix and mix till all moistened.
Bake at 350 degrees for 45 minutes to one hour.
If you want more casserole style, cook less time and it will be like corn pudding almost, or make longer and it will be fancy cornbread.
You really can't mess this up!!!
**Also it can be made in the microwave, just adjust times to about 15 to 20 minutes and then check for desired consitancy.
