Campfire Cooking
CHERRY CHEESECAKE SURPRISE

Ingredients:
pita pockets
cream cheese
cherry pie filling

Directions:
Take pita pockets and in each spread some cream cheese followed by a
Good dollop (large spoon) of cherry pie filling.  Wrap in foil and warm in coals.  The surprise is that it really does taste like Cherry Cheesecake!


HAWAIIAN DELITE
(Makes one dessert)

Ingredients:
1 plain cake donut
1 ring of canned pineapple
approx 1 Tbsp. brown sugar
juice from pineapple

Directions:
Slice donut like a sandwich.  Put pineapple ring in between halves.  Sprinkle a bit of brown sugar inside before closing up.  Sprinkle some juice over top of donut then add more brown sugar.  Wrap securely in foil and heat on coals about 5 minutes or so.  This cooks quickly and tastes great.


WHISTLING APPLES


Ingredients:
small apple
brown sugar
cooking stick

Directions:
You will need a cooking stick for this dessert.  Poke a small apple
with the stick.  Be sure that it is secure.  Hold apple over the fire, but not too close to the flame until the apple begins to whistle.  Turn apple to be sure it bubbles and whistles all over.  When you take apple away from the fire, the peel should just about fall off. 
Roll apple in brown sugar.  Put the apple back over the fire for just
a minute or too.  This will make the brown sugar turn to liquid.  It
tastes just like caramel.  Let cool for a minute or two and ENJOY!!  Beware!!  If you have a problem with bees at camp, this recipe is like ringing a dinner bell for them!!



AND DON'T FORGET SOME OF THE OLD FAVOURITES

Banana boats

Take a banana, don't peel it!  Cut with a sharp knife through the peel and about 2/3 of the flesh along the inside of the curve.  Stick some chocolate in the slit, and maybe other stuff as well... my favourite is to use some rolos, other add marshmallows, mars bar, all sorts of things - have fun experimenting.  Wrap in foil (not necessary but cleaner) and stick in the embers for about 5 minutes then open & scoop out the gooey innards with a spoon.

Baked apples
Core an apple, fill the gap with either sultanas and brown sugar, or chocolate etc. as above.  Wrap in foil, stick in the embers.  These take a little longer than the bananas.

Orange sponge
Take an orange, slice off the top and scoop out the flesh.  Fill the shell with cake mix, replace the "lid", wrap in foil and stick in the embers for 10-15 minutes.  There you have an orange flavour sponge dessert.
