Coconut ice Ingredients: 4 table sp condensed milk 12 oz icing sugar 6 oz desiccated coconut Red/pink food colouring Divide the milk, sugar and coconut between two bowls and mix well, adding a LITTLE food colouring to one half to get a pale pink colour. The mixture should be very stiff. Dust a board with icing sugar and shape the mixture into bars and press a white and pink bar together. This makes a lot - you could half the quantities. SHERBET 1 tsp bicarbonate of soda 3 tsp citric acid 7 tsp icing sugar all mixed together. See also ziploc fudge (also known as armpit fudge) Indian sweets (1) One that we've made often is based on semolina - sounds wierd but it's rather nice. You'd need to make it at the start of the meeting to let it cool. Just cook semolina and milk (full cream works best, or even add a bit of cream or evap milk) with a few cardomons and raisins and sugar so it's rather thicker than the normal semolina pudding. Stir in a few drops of orange flower water and pour it into a shallow tray to cool & decorate with raisins, slivers of almonds, and edible silverfoil if you have any. Add a handful of dessicted coconut, a few raisins and chopped nuts. Mix together. Form into small balls with the hands. Coat with icing sugar and leave to set. Very sticky but good fun. Marshmallow snowflakes For these very simple snowflakes, each child will need 6 toothpicks, 12 mini marshmallows, and one large marshmallow. Insert each toothpick through 2 mini marshmallows, leaving some space between them. Then insert the six toothpicks evenly around the large marshmallow (like spokes on a wheel). Be sure the toothpicks are inserted far enough to stay. You can attach a thread loop if you want to hang these snowflakes! |
