AMERICAN PORK-FRIED RICE

  • 1 lb. of pork strips for stir-fry
  • 2 eggs
  • i large white onion, cut into 1 inch pieces
  • 1 small box of frozen peas, thawed
  • 3 cups of cooked white or brown instant rice
  • 1 cup of soy sauce
  • 1/3 cup of vegetable oil

  • In a large non-stick skillet or wok, saute the onions in the oil until translucent but still crisp-tender.
  • Add the pork strips and saute until golden, about 5 minutes, stirring constantly.
  • Add the eggs and peas and cook, stirring, until the eggs are scrambled.
  • Add the rice and soy sauce; mix well.
  • Cook over a low flame, stirring occasinally, until the rice is a nice deep brown color.

  • Serves 4-6



    EASY & SPECIAL POTATO SALAD

  • 5 lbs. of new potatoes, washed, peeled and cut into 1-inch chunks
  • 1 large onion, chopped
  • 1 stalk of celery, strings removed and sliced
  • 2-3 cups of Miracle Whip salad dressing (mayo)
  • 4 tbsps. paprika
  • 1 tsp. each salt and pepper

  • Place the potatoes in a pot with enough water to completely cover them. Bring to boil and cook until tender. Do NOT overcook or they will be mushy. Check doneness after 10 minutes and contnue cooking if needed, checking every couple of minutes.
  • Drain potatoes in a colander and rinse with cold water until no longer hot.
  • Mix all ingredient in a large bowl, adding more Mircle Whip if salad seems too dry.

  • Makes enough for a party or several meals.

  • If desired you can top the salad with sliced hard-boiled eggs.
