Apple Crumb Pie
This is a wonderful, quick dessert that's especially good on crisp fall days.  It is equally good hot or cold and is only improved if served with either ice cream or cheddar cheese.
9" unbaked pie shell
5 - 7 tart apples (about 5 cups)
1/2 c. sugar
3/4 t. cinnamon
1/3 c. sugar
3/4 c. all-purpose flour
6 T. firm butter

  Preheat oven to 400 degrees.  Pare apples; core and cut into eighths.  Arrange in pie shell.  Mix 1/2 cup sugar and the cinnamon; sprinkle over apples.
  Mix 1/3 cup sugar with the flour, cut in butter till crumbly.  Pile over apples.  Bake at 400 degrees for 35-40 minutes.  If pie browns too quickly, cover edges with foil.
