Lena's Meatballs

2 lbs ground beef 
6 cloves minced garlic
1 medium handful both salt and pepper
2 eggs
1-1/2 cup Parmesean cheese

2 T. olive oil              1-1/2 t. garlic salt

Mix first six ingedients together in large bowl. Taste. Shape into 3" balls. Add oil and garlic salt to pan. Brown in hot oil on all sides over medium heat. Add to canned or homemade sauce and cook 1-1/2 to 2 hours at simmer or cook in pressure cooker 8 minutes.  Serves 4 - 6
This is the recipe I get asked for the most. It is also the first Italian dish my mother in law taught me to make. I'd just given birth to our son and she came to help out. I sat and took notes and am now considered one of the best italian cooks in the area. Admittedly, given the limited number of Italians in Indiana that's not too hard :)  This recipe is also the basis of our lasagna, stuffed shells and meatloaf recipes.
