At a recent dinner party I included this dish, and Pat enjoyed it very much, so I've included on this page. Hopefully this will start to ball rolling and you will email me your favourite recipes, with a little comment included. |

100g red lentils 1 tbsp oil or vegetable ghee 1 onion chopped 1 tsp chilli powder ( or to taste) 1 tsp ground coriander 1 tsp ground cumin 1 tsp ground turmeric 1 tbsp plain flour 600ml vegetable stock (oxo cube in water) 50g salted peanuts 25g desiccated cocont medium cauliflower broken into florets juice of half lemon salt & pepper |

METHOD: Put lentils in saucepan, cover with cold water, bring to the boil simmer for 5 min, then drain. Heat oil or ghee in pan, add onions, fry until softened. Add spices & flour and cook over low heat 2 min. Now add stock, peanuts, coconut & drained lentils. Bring to boil and simmer for 15 min. Stir in cauliflower,lemon juice,salt and pepper. Cover and simmer for 20min until cooked. |

Serve with a variety of other dishes and warmed Naan bread. | ||||||||||||||||||
