season with salt & pepper the meat of chicken, pork & fry until slightly brown. In a deep pan with cover, fry in trhe order given, the garlic, onions, & tomatoes. Add the potatoes, chicken, pork & chorizos. Mix well, cover the pan & cook until the meat & potatoes are tender. add water if necessary. add sweet peper, sweet peas & olives.When meat & vegetables are done, remove someof the stock from the pan & set aside. Add cooked rice to the mixture & mix thoroughly with a wooden spoon until well blended. Add remaining stock & seasoning to taste. cook on low heat until mixture becomes quite dry. Garnish top with sliced hard-cooked eggs, stuffed olives & red pepper slices. |
