Part of Philippine History is inhabitant of foreigners from different part of the world such as Malaysian, Indonesian, Chinese, Spaniards, Japanese and Americans to name the most important who influenced Philippine culture, fashion, food tastes & practices. Because of the advancement in both science & technology, Philippine's methods & practices in cookery shift from traditional cooking into can opening, pressure cooking & fastfoods.

But still, the spirit of traditional taste stays in the heart of the Filipino people despite the speedily changing world. Filipinos who resides and work in different parts of the world still misses this Filipino foods and craving for this native tastes shall not be satisfied with pizzas and burgers. One of the most satisfying memory of Filipino foods is sitting at the banquet of weddings & fiestas which are grandly celebrated by the majority of Filipino families.

Starting this month and onward, I will post different Filipino recipes each week.

ARROZ A LA VALENCIANA

1 young chicken cut into regular pieces
1/2 kilo meat, also cut into regular pieces
2 pieces chorizos de Bilbao sliced
6 potatoes, quartered
1/2 cup shortening
2 segments garlic, macerated
1 onion sliced
1 cup tomatoes
salt, pepper & paprika to taste
Slices of red pepper
1 cup sweet peas
1/4 cup olives
slices of hard boiled eggs
3 cups rice, boiled in 3 cups water & 2 cups coconut milk
1 teaspoon salt

season with salt & pepper the meat of chicken, pork & fry until slightly brown. In a deep pan with cover, fry in trhe order given, the garlic, onions, & tomatoes. Add the potatoes, chicken, pork & chorizos. Mix well, cover the pan & cook until the meat & potatoes are tender. add water if necessary. add sweet peper, sweet peas & olives.When meat & vegetables are done, remove someof the stock from the pan & set aside. Add cooked rice to the mixture & mix thoroughly with a wooden spoon until well blended. Add remaining stock & seasoning to taste. cook on low heat until mixture becomes quite dry. Garnish top with sliced hard-cooked eggs, stuffed olives & red pepper slices.
