Simple Salmon Cakes (The Hospital for Sick Children Better Baby Food)

2 cans salmon (or tuna) bones & skin removed, drained and flaked
1.5 cups mashed potatoes
2 eggs, separated
2 tbsp. flour
pinch salt
1/2 cup dried bread crumbs

Preheat oven to 375 degrees

In a bowl combine salmon and potato. Blend in egg yolks. with your hands, form mixture into flat cakes. Combine flour, salt and bread crumbs. Brush cakes with egg white. Coat with bread crumbs and bake for 15 minutes or until golden brown. Makes 12-16 cakes.
Add other seasonings to the salmon/potato mixture and/or bread crumb mixture.
