Caramel Popcorn (Company's Coming Appetizers)

5-6 qts. popcorn (about 1 cup unpopped)
1 cup butter or margarine
2 cups brown sugar, packed
1/2 cup corn syrup
1 tsp. salt

1 tsp. vanilla
1/2 tsp. baking soda

Preheat oven 250 degrees. Have popcorn ready in extra-large container.
Combine butter sugar, syrup and salt in heavy saucepan. Heat and stir over medium heat until boiling. Boil without stirring for 5 minutes.
Stir in vanilla and baking soda. Pour over popcorn. Toss together well until all pieces are coated. Spread on 2 large ungreased shallow pans. Bake for 1 hour, stirring every 15 minutes. Cool thoroughly. Break apart and pack in plastic bags.

Special Caramel Corn: Use only 4 qts. popcorn or 1.5 times the quantity of syrup for 6 qts. of popcorn and 2 cups peanuts. Extra delicious.
