Carne Guisada | ||||||
Yet another recipe given to me by my Hispanic friend April. Carne guisada is a Tex-Mex staple which consists of really tender meat, gravy, and spices. It's really excellent in a burrito with some cheese and hot sauce. I've eaten more carne guisada burritos from Josie's than I care to admit. Ingredients: 1 lb. beef stew meat Cumin (to taste) Salt Black pepper To Do: Put the meat in a large pot or Dutch oven. Cover with water. Cover & boil. Boil some more. And some more. When the meat gets tender, take the lid off, stir it around, and let the water evaporate off. It will make its own gravy. When the gravy starts to get thick, add cumin, salt (a little goes a long way, so be careful) & pepper. Keep boiling & stirring til the water is nearly all gone & you're left w/meat and gravy. YOu can use flour or harina preparada (prepared flour - used to make tortillas) to thicken the gravy. So time consuming (it takes at least an hour for the meat to get tender & the gravy to become gravy) but SOOOO GOOD! Really good in the winter. Don't forget the tortillas! |
