You have entered the Kitchen of the May Sparkle Sisters House of Friendship! First, Fairy D'Dane has here some nice recipes for all to try!

This is a great summer stew that takes next to no time to make.. add a green salad with your favorite dressing and some lemonade or iced tea.. raspberry tea is MY favorite.. along with some good crusty French or Italian bread and you have a great meal!! Don't forget your dessert for that sweet tooth!!

Summer Chicken Ragout

What you need:
2 LBS Chicken Breasts Strips
2 or 3 medium sized Leeks... chopped
3 cups (or approx. 4 large ears) fresh Corn cut off of the cobs (keep the corn cob juice as it adds body)
3 TBLS unsalted Butter

1 1/2 to 2 fresh Jalapenos... finely minced
3 cans Chicken Broth... (low sodium for more flavor)
3/4 tsp. Salt
1/4 cup fresh Lime juice
1 large ripe Tomatoe... cut up
3 tbls fresh Basil, chopped (dried is ok but not as good)
(note: you can use Cilantro instead of the Basil but there is a taste difference)

What to do:
~ In a LARGE pot saute the chopped Leeks in the Butter.
~ Add your FINELY minced Jalapeno, Salt, Chicken Stock/Broth.
~ Stir and simmer for a few minutes.
~ Add the cut up Chicken strips and corn & corn juice and simmer for about 12 - 15 minutes... or until the chicken is cooked.
~ Add the Lime juice, Tomatoe and fresh Basil and cook for about 3 - 5 minutes.
This recipe serves 4 big eaters!

~*~ You are now ready to feast on a great meal... add your favorite bread and salad, your ice cold beverage or a nice Red Merlot or White Zinfindel wine for the adults... and enjoy!! ~*~


Jean's Dessert

What you need:
2 - 12 oz cans of Mandarin Oranges... drained
8 oz. Cool Whip
8 oz. Cottage cheese, small curd... I use low fat type
1 small box Orange Jello... uncooked *g*

What to do:
~ In a 2 quart dish, mix the cottage cheese & orange jello
~ Add the Cool Whip.. gently
~ Add the Mandarin Oranges, very gently
~ Refrigerate for at least 2 hours and then dig in!!

Note: I have no idea where this recipe originated from but a good friend... Jean... passed it on to me a long time aga and to this day I just call it: Jean's Dessert
ALSO.. I have used other fruits and flavors (Pineapple works real well) in this recipe and they tasted great.. but I always come back to the Mandarin Orange.


This is a Chinese dessert that Wee One Opal's mom makes.

Eight Grain Congee

What you need:
1 cup sweet rice
1/4 cup of each of the following
lotus seeds (be sure to take out the green center sprout in each to avoid a bitter taste)
raw peanuts
mung beans
dry longen beans
kidney beans or small red beans
large or small (or both) tapioca
1/4 cup of the following, optional
pearl barley
a few more types of beans (but no black beans)
**All of these can be purchased at Oriental food stores**
NOTE: Do NOT soak beans beforehand!

What to do:

  • Add about 15 cups of water in a large pot.
  • Add all ingredients listed above EXCEPT sweet rice, mung beans, and dry longen beans. The pearl barley and tapioca can also go in now or later.
  • Once boiled, turn the heat down and simmer, covered, for about 3 hours.
  • Add the sweet rice, mung beans, and pearl barley and tapioca if you did not before. Here is also where you add as much sugar as you care to have.
    NOTE: NO cold water may be added after the sweet rice is added. Any additional water needs to be already boiled and hot to avoid ingredients sticking to the pot.
  • Keep at low heat for another hour, stirring every 10-15 minutes.
  • Turn off the heat and add the dry longen beans.
  • Serve hot or cold for dessert.
