Nothing like a good breakfast to start your day off right. This one would be particularly appropriate for a special occasion, such as a birthday or holiday. Enjoy!
 

 

Swedish Pancakes with Loganberrie Sauce

  ***This is my Great-Aunt Lodema's special recipe, which she makes for her son on Christmas morning. He often spoke of them on his tour of duty in Vietnam.***
 
3 eggs
1 cup milk, divided
1 1/2 cup sifted flour
1/2 teaspoon salt
1 tablespoon granulated sugar
1/2 whipping cream
2 tablespoons melted butter or margarine
2 cups loganberries
1 cup sugar
Cook loganberries with 1 cup sugar. Set aside.
Beat eggs until very light.
In a mixing bowl, sift flour, sugar, and salt. Add milk and dry mixture to eggs.
Add cream, butter, and remaining milk.
By tablespoons, put batter into skillet. Cook until golden brown on each side.
Remove each pancake from skillet. Put 2 tablespoons loganberries on each pancake and roll up. Sprinkle with powdered sugar.
 

  These pancakes taste particularly good with Owens sage sausage and fresh-squeezed orange juice.
