Marge's EASY Blueberry Muffins**

 

East Texas HAND PICKED Blueberries -  We actually picked some of these very blueberries!!!!!
  • 1 package Sweet Yellow Corn Muffin Mix
  • 1 cup Pioneer or Bisquick Baking Mix
  • 2 Eggs (beaten)
  • 1 Cup Milk *or Sour Cream or Yogurt* or combination.
  • 2 TBS Canola or Vegetable Oil
  • A little honey or brown sugar or sugar
  • Generous supply of fresh or frozen blueberries.

 


  • Mix dry ingredients - Muffin mix, baking mix and sugar, if used.
  • Beat eggs. Blend in milk (or other dairy substitute), oil and honey, if used.
  • Stir wet mixture into dry ingredients. Do not beat... just mix well.
  • Spray muffin pan with canola or vegetable oil spray.

    There are two methods....
  • You can mix the blueberries into the batter but the batter ends up stained purple.

    OR ... You can....
  • Fill muffin cups 1/3 full.
  • Add layer of blueberries.
  • Fill muffin cups rest of the way.
  • Poke a few more blueberries into the top.
  • Bake @ 350 - 400 ° for 20 - 25 minutes.

**I came up with this recipe one day when we WANTED Blueberry Muffins. We'd been picking blueberries everyday for a couple weeks at our friends farm - finally had a day off and I mean I REALLY REALLY wanted Blueberry Muffins. I rumaged thru the pantry and found one scant cup of Pioneer Baking Mix and one package Corn Muffin Mix. Necessity being the "Mother of Invention" and really NEEDING Blueberry Muffins, I decided to just go with it! Threw the mixes together... and evolved the above recipe! I have tried it with milk, yogurt and sour cream... even used canned milk once and they turn out marvelous no matter what!!
