Grand Mom Deitz’s Maryland Crab Cakes**

 

YEP!  That's a crab all right!!!
  • 1 lb Cooked Blue Crab Meat
  • ¾ Sleeve Crackers (crushed)
  • 1 Egg (beaten)
  • 1 Cup Mayo *
  • ½ teaspoon "wet" mustard
  • few dashes of Worcestershire sauce
  • 1 to 2 Tablespoons of OLD BAY Seasoning
  • Fresh parsleys, chopped, add to taste. Use quite a bit, if you like!

 

  • Mix wet ingredients. Mix dry ingredients. Mix together, gently. Form into cakes.
  • Let set up for a while. Brown in small amount of butter over a medium-hot griddle or skillet.

Notes:

  • * One CUP Mayo is what the recipe reads, BUT, I’ve found that a whole cup of MAYO is way too much and makes the mixture too wet. Half a cup of mayo is almost too wet

  • I also do not add all my cracker crumbs to the mix. I use quite a few more - like two "sleeves" total - and roll or pat a layer of cracker crumbs on the outside of the patties. We like RITZ crackers but, any cracker cumbs will do!

  • I also have a "trick" I use - not just with this recipe but with anything that gets "floured". I use plain instant mashed potatoe flakes. They can be mixed in and/or added to the coating. Adds a nice lightness to the crispy crust. Also great in fish fry, on chicken, pork... anything that gets "floured" or "breaded".

  • I sure hope you have OLD BAY Seasoning where you live. It is a McCormick Spice that comes out of Baltimore, MD. When I first moved to Texas, we couldn’t get it here and my Mom or one Sister or the others... would sent me a can every now and then with Christmas or Birthday presents! Now just about every store around here carries it! I use it in all kinds of other dishes too. It is great in Salmon patties, Fried Chicken, Fish, potatoes, and lots more!!!! And they recently came out with an Old Bay Seasoning with Lemon and Herbs that we've tried - it's pretty good.

  • The crab that we use in Crab Cakes is the "blue crab" - pictured at the top. It is a different crab than the snow crab legs come from. We can buy it in the grocery seafood department most all the time. Although any kind of crab meat will work in this recipe, I bet. Go ahead and try that fake crab…it may just be good, too!!! Fresh crab must be cooked, steamed before being picked and used in this recipe.

**Grand Mom Deitz was my father's mother. I never knew that "our" recipe was hers until after she was gone. My mother sent me a recipe card with this recipe on it. I lost that card and she sent me another one - in her handwriting. I used one of those laminating sheets and stuck it to the inside of the kitchen cabinet door - right next to the stove! Told my Mom I'd never lose it again. Sheesh...didn't know I'd burn the house down and that cabinet door would be incinerated. Lucky I had posted the recipe on a friends forum and they still had a copy!
