CAROLYN'S CHICKEN POT PIE
4 hard boiled eggs
2 cans of peas and carrots
1 can cream of mushroom soup
1 can cream of celery soup
1 whole chicken, seasoned and boiled
1 1/2 cups of chicken broth

Topping:
1 1/2 cup butter, melted
1 cup flour
1/2 cup milk
Debone chicken and put in a 9 x 13-inch pan.  Slice eggs on top of chicken.  Drain vegetables and put on top of eggs.  Mix 2 soups with chicken broth and put on top of vegetables.  Mix all ingredients in topping and pour on top.  Bake at 375 degrees for 45 minutes or until top is brown.
MATTHEW'S CORN BREAD FRITTERS
1 1/2 cup plain yellow corn meal
2 tsp. baking powder
1 small onion, finely chopped
1/2 cup flour
1 Tbsp. sugar
1 egg
1 can cream-style corn
salt and pepper to taste
Mix ingredients and drop by spoonfuls in deep, hot oil.
JEANIE'S CHERRY CRISP
Pour cherry pie filling into a 9 x 13-inch baking pan.  Mix sugar, flour and baking powder in bowl.  Add egg and blend to make fine crumbs.  Sprinkle over cherry pie filling.  Pour melted butter on top of crumbs.  Bake at 350 degrees for 35 to 40 minutes.

1 stick butter, melted

Debbie, one of our Pokeno members gave each of us one of these "Cake in a Jar" gifts for Christmas.  They were delicious and moist.  Just right for one or two people.
CAKE IN A JAR
1 box of cake mix
1 3.4 oz. box of pudding
(instant or cooked)
1 cup of water
2/3 cup of water
wide mouth pint mason jars
Spray inside of jar with Pam.  Mix to together ingredients and put 1 cup of batter per pint jar.  Place on cookie sheet and bake at 325 degrees for about 45 minutes.  Let set for 10 minutes and seal.
TOO MANY TOMATOES?
Turn them into salsa!  Keep a big pitcher of salsa from your favorite recipe in the fridge and pour it into bowls to serve with corn chips when family or guests arrive.  For a low-fat snack, cut fresh corn tortillas into wedges with scissors.  Lay them out on a cookie sheet sprayed with nonstick vegetable spray and bake them at 350 F until they're crispy.
If your homemade jelly doesn't jell, don't throw it out.  Give it a second chance by mixing 4 cups of the jelly juice, 1/2 cup water, 1/4 cup sugar, 2 tablespoons lemon juice, and 4 teaspoons dry pectin.  Boil the mixture for 30 seconds, skim off the foam, then process according to your original recipe directions.
