Got a bumper crop of apples this year? Make apple butter! Boil 3 cups of apple cider in a large stainless-steel pot. Add 15 thinly sliced medium apples (with peel). Bring the mixture to a boil; then simmer, stirring freequently. When apple slices fall apart, pour the mixture through a food mill; discard peels, seeds, and stems. Simmer the remaining mixture for 4 to 5 more hours until it is thick and dark brown. Sweeten with honey and add cinnamon, cloves, or allspice to taste. | |||||||||||||||||||||||||||
Now's the time to plant a batch of fall green manure in your garden. Green manures are crops grown for a time and then worked into the soil to increase soil fertility or organic matter content. Turn your fall perennial garden with a riot of color. Pink or white Japanese anemones have single or double flowers that seem to flutter on their slender stems. Boltonias bear many lacy, daisylike pink or white flowers. They look like their relatives, the asters, which bloom in blue, purple, red, pink, or white.
