Ruth's Split Pea Soup (from Fix it and Forget it)
1 Large Onion, finely chopped
Olive Oil
1 Pound Bulk Sausage
6 Cups Water
1 Pound Dry Split Peas
2 Medium Potatoes, diced
1/2 teaspoon Marjoram
1/2 teaspoon Pepper
Brown and drain the sausage. Saute the onion in a small amount of olive oil until the onions are soft, about 3-4 minutes. (This really makes a difference, especially if you are serving this to kids.) Wash and sort the dried peas. (You do NOT need to soak the peas overnight.) Pick out any stones. Combine all ingredients in the crockpot. I cook it on high for 6 hours and low for 4 hours. You can also try cooking it on low for 12-14 hours.
WW's gals, even with the sausage 1/6th of the soup is only 9 points. This one is Mr. Picky approved.
