Spicy Chicken Wings
Personally I love chicken wings and this would just be enough for me alone
when I get my craving for wings.
If you want less work, just purchase the split wing pieces or the drumettes alone.
8 chicken wings, about 1 3/4 lbs.
2 tbsp. lemon juice
2 tbsp. plain yogurt
1 small onion, peeled
2 cloves garlic, peeled
1 tsp. grated fresh ginger
1 small hot pepper, optional seeded
1 tsp. paprika
1/2 tsp. each ground cumin and turmeric
1/4 tsp. each salt and ground coriander
pinch cayenne
Cut off wing tips and reserve for stock. Divide remaining wings into 2 sections at joint. Place in bowl.
In a blender or food processor whirl together lemon juice, yogurt, onion, garlic, ginger, hot pepper, paprika, cumin, turmeric, salt, coriander and cayenne. Add to wings and mix well. Cover and marinate for 2 hours or overnight in refrigerator, stirring around occasionally.
Grill or broil 4 - 5 inches from heat, turning with tongs, until crusty and brown, about 4 to 6 minutes per side. Serve hot with lemon slices.
Makes enough for 3 to 4 appetizer plates, 2 to 3 for main course.
