I'm a fan of things Medieval--and, I should hasten to add, not just of Medieval European things, but also African, Asian, and American (North and South) of that era. However, I'm placing most of the historical stuff in the History section, and limiting the sites here to links that are somehow about life and culture during the Middle Ages, rather than about history.

The alchemy web site As much information, both essays and links, as anyone (well, any non-practising alchemist, anyhow) could possibly want on alchemy.
Angelcynn - Clothing and Appearance of the Pagan Anglo-Saxons Very thorough essay, with images, of Anglo-Saxon clothing. Absorbing, if you enjoy this sort of thing (which I do).
At the court of Attila A wonderful historical account of the court of Attila the Hun.
Attila the Hun and the Battle of Chalons A very entertaining article the Battle of Chalons (451 AD) and Attila the Hun.
Byzantium: The Byzantine Studies Page I'm a huge fan of John Julius Norwich's Byzantium trilogy, which is some of the most readable history I've ever had the pleasure to discover, but for those of you who don't own those books, these pages are an excellent substitute.
Castles on the Web A good, thorough introduction to the subject.
Celtic Net Home Page Under Construction, but still worth a brief look, if you're interested in this sort of thing; some links on Celtic history and culture.
Collection of Medieval and Anglo Saxon Recipes Have you ever wanted to cook a Genuine Medieval Recipe? I know I sure have! If you're like me (and I know I am) you'll want to go here to do that.

Columbus and the Age of Discovery A big database of scholarly & academic articles on Columbus, the Age of Discovery, and the peoples, both European and American, involved. No matter what your interests, there's sure to be something here to catch your eye.
Daily life in a medieval castle A neat little essay on what it was actually like to live in a castle. Part of a larger site on castles; you might find the other pages in the site worth visiting, too.
The Devil and Religious Controversies of 16th Century France A long, scholarly essay on dealing with the Devil and Satanic possession in 16th century France.

Domesday Book The e-texts of "three essays in the Early History of England."
The Early Modern / The Italian Renaissance From the really good World Cultures site.
* EAWC: Medieval Europe From the very nice Exploring Ancient World Cultures site.
* The Ecole Initiative A "hypertext encyclopedia of early Chuch history." Primary sources, essays, images, and a timeline.

* Empires Beyond the Great Wall: The Heritage of Genghis Khan The quite good online version of the museum display; lots of very nice images.
The European Middle Ages From the excellent World Cultures web site.
Genghis Khan @ nationalgeographic.com Despite the colors of the introductory page being too dark, and therefore too hard to read, this web site is still worth visiting. Although the National Geographic is reportedly a horrible place at which to work, they still produce some very interesting stuff.

Great Hunger of 1044 A thesis on the causes and progress of the northwest European famine of 1044.
Heraldica A site devoted to heraldry; articles, a FAQ, a glossary, an atlas, and loads more information.
Hildegard of Bingen A long essay on a notable Medieval woman.
HWC, Crisis in the Church Part of the History of Western Civilization site. A series of 19 essays on the Babylonian Captivity & the Great Schism.
Ian Jessiman : The Plague, England and Loughborough 1539 - 1640 A nice long essay on the plague. Yum!

Index of the Viking Network Web A series of indices on Viking life, travels, regions, people, and heritage.
Jesuits and the Sciences: 1540-1995 A thorough guide to the involvement of the Jesuits with the sciences.
Joan's Witch Directory An informative guide to the people who were accused of witchcraft and died because of it.
* The Khazaria Info Center A very thorough and lengthy "resource for Turkic and Jewish history in Russia and the Ukraine."
* Labyrinth Home Page An exemplary array of links and resources.
Living History This is the official site of the Living History of the West Stow Country Park and Anglo-Saxon Village. Some useful information here.
Medieval & Renaissance Europe Primary historical documents of Medieval & Renaissance Europe.
The Medieval Review An electronic journal reviewing current work in all areas of Medieval Studies.
* Medieval Sourcebook: Introduction An excellent all-around resource for information and links on things Medieval.
Medieval Technology Pages "The Medieval Technology Pages are an attempt to provide accurate, referenced information on technological innovation and related subjects in western Europe during the Middle Ages." Neat-o!
The Middle Ages: Feudal Life A good introduction to life in the feudal system.
Old English Pages: Map of Anglo-Saxon England Mmmm, boy, do I like stuff like this. It's not interactive, but it's easy to read and has some nice symbols to explain what you're seeing.
* The Online Medieval and Classical Library If you're looking for medieval texts online, you need go no further than this site.
* Online Medieval Reference Book Oh, boy. About as thorough a list as you can find of articles, resources, and links on things Ancient & Medieval on the Web. Excellent work.

Orders of Chivalry and Knighthood Long essays on various medieval chivalric orders.
* The origin and the deeds of the Goths The online text of Jordanes' The Origin And The Deeds Of The Goths. Great primary historical text.
Philip Augustus' Paris Information on Paris during Philip Augustus' time, and links to other relevant sites.
Plague and Public Health in Renaissance Europe A "hypertext archive of narratives, medical consilia, governmental records, religious and spiritual writings and images documenting the arrival, impact and response to the problem of epidemic disease in Western Europe between 1348 and 1530."
Plague in Elizabethan England Damn it, I hate when web-designers choose horrible color combinations - things like this page, with a black font against a dark-blue background, are nearly impossible to read. Still, if you can struggle through that, you'll find two medium-length essays on the plague, each with an annotated bibliography.

The Reformation and Counter-Reformation A long essay on the Reformation and the Counter-Reformation.
Regia Anglorum A good web page on the world of Britain circa the turn of the millennium.
Renaissance Forum "An electronic forum of early-modern literary and historical studies."

Renaissance Italy* A thorough list of information on seemingly everything having to do with the Renaissance in Italy.
The Rise of Popular Heresies A medium/long essay on what caused "heresies" like the Albigensians & the Waldensians.

Saunders: History of Medieval Islam A long essay on the entry of the Seljuk Turks into Western Asia; this was originally a chapter in Saunders' book.
SCA's combat posts My opinion of the Society for Creative Anachronism isn't high, but this is a very thorough list of information on medieval hand-to-hand combat.

* Search Argos You might connect. You might not. The site is finicky about that. But if you do you'll find a search engine for the "ancient and medieval Internet." By which, of course, they mean a Hotbot-style search engine that will bring you links to web sites on ancient & medieval subjects. The site allows for truncation, and brings some quality sites.
Secrets of the Norman Invasion The main page of a very long and detailed look at the 1066 invasion. Hard to do much better than this, on this subject.
A Study Guide for Elizabethan-Jacobean England Links to articles and web pages on E-J England.

Sultana An essay in defense of Sultan Abdulhamid II.
Traditions of Magic, Introduction An brief but good essay on the "Traditions of Magic in Late Antiquity."
The Treasure Fleet The start page to a series of essays on the Spanish treasure fleets. Medium-length essays, with images, on their routes & organizations, what shipboard life was like during the 17th century, how the ships were constructed, what they were armed with, the myths vs. the reality of the treasure fleets, and what caused their decline.
Vikings and Asatru. An index of links on the Vikings and the Asatru cult.

* Virtual Renaissance A neat online guide to the Renaissance.
A Visual Tour through Late Antiquity A bunch of images of late antiquity Gaul, circa the era of Gregory of Tours.

Wars of Religion A long essay on the 16th century French wars of religion.
Women Writers of the Middle Ages Medium-length essays on some notable female writers of the Medieval centuries.
Wyrme's Encyclopedia of Knighthood An online encyclopedia (with entries of varying length) on just about every aspect of knightly life.
