Hollow Grinding
Most knives are stamped, shaped and tempered out of flat stock.  Our Professional grinding machines are state of the art. We hollow grind both sides of the blade to .018 of an inch, then we hone a 35 degree angle. This edge will be easy to maintain with a steel or edgemaker, giving you a precise, extremely sharp edge.  
Hand-Rolled Grinding
All forged knives have a rolled edge. This means that a blade is thicker at the back and top then tapered toward the edge and tip of the knife.  We hand grind, polish and hone the blade back to give you a professional, strong,  guaranteed-sharp edge.

We recommend that you properly care for your knives by keeping them clean and sharp.  Not only is a dull knife difficult to use, but the extra pressure needed to cut with a dull blade makes accidents more likely, and a cut from a dull blade is usually more painful and severe than a cut from a sharp one!

So when should you bring your knife to us to be sharpened?  Well, if your sharpening steel or other edge maintenance tool does not seem to be working, it is probably time to bring it to the Knife Shop to be re-ground.
