This page is more about myself and my family.  I thought it would be nice to put a couple of their favorite recipes on here. Dick and I have 3 kids that are all grown now. There is Rick the oldest then Dan and the baby is Kim. Rick has one son Jason and Jason has one son. There is Cindi..Ricks partner of many years..Cindi has 2 daughters Courtney and Nikki.  Nikki has 3 daughters.  Kim is married to Ed and they have 3 daughters. We like to say that we have 2 vacations a year...each lasting 6 mo. each--that means we are both retired. Our favorite things to do is travel .. .we went to Alaska in July.. and we spend LOTS of time with our grand kids. Be sure to check out our grand kids pages. We both were born and raised in New York state and still live there. We also spend a lot of time at our summer home  on beautiful Kauka lake.
                        SWEET CHILI
This is one of my grandson, Jason, favorite dishes. Whenever I ask him to dinner he asks if I'm making sweet chili. I take it to dish to pass picnics a lot and everyone wants the receipe.
 
2 lbs. browned gr. beef well drained         1 cup chopped onions
3 8 oz cans pork and beans                       1 cup ketchup
2 cans kidney beans                                   3/4 cup brown sugar
1  8 oz can mushroom pieces                     1 tbsp mustard
                                              1 tbsp. vinegar
Mix all together.  Heat on slow in crock-pot for 12 hours or bake at 350
for 1 hour or simmer in large pot for 1 1/2 hours.

I use more cans of kidney beans and you can pretty much use any size
cans of beans, mushrooms or whatever you want.
This cake is so good and so easy I am sure it will become one of your favorites too.  I always have the ingredients and when unexpected company comes it's very easy to mix up.
PINEAPPLE CAKE
2 eggs                                1 tsp. baking powder
2cups flour                         1 20 oz. can of crushed
2 cups sugar                        pineapple (do not drain)
Hand mix all together. Pour into a 13 x 9 inch pan; do not grease
Bake for 30 to 35 min. at 350 degrees.

If you notice this cake has no fat.  It is really good frosted with cream
cheese frosting but if you want no fat I just sprinkle with xxx sugar.
BEEF MUSHROOM POCKETS
1 box hot roll mix--prepare as for pizza
     Cut dough into 8 pieces--roll each piece into a circle
2 lbs. ground beef--brown well with 1 small onion----drain well
    Add
1 can cream of mushroom soup
    Cook together for 5 minutes
     Spoon mixture onto circles of dough and top with grated cheese
         fold up and place on greased cookie sheet
                     Bake at 375 for about 20 minutes

I have also used gr. turkey and have used chicken and cream chicken soup.
                
                     PEANUT BUTTER PIE
Line pie plate with gram cracker crust shell
1 cup xx sugar      1/2 cup peanut butter
            mix well with hands
                      Spread 1/2 over pie crust
Mix 1 large vanilla instant pudding as directed on package  Spread over crumb mixture in pie plate
      Sprinkle rest of crumb mixture over pudding
This is a salad that I make for lunch quit often.  It is very easy to make and oh so good.  I serve it with bread or rolls and always have pineapple cake for dessert. Nobody ever leaves any on their plate and they all want my recipe.
Cashew Chicken Toss
2 cans (8 oz.)pineapple chunks         1 lb. boneless skinless
3 tablespoons sugar                              chicken breast
2 teaspoons cornstarch                     1 pkg. salad greens
2 teaspoons grated orange peel         1 can (11 oz) mandarin
1/4 to 1/2 teaspoons dried basil               oranges drained
dash of pepper  
                             1/3 cup cashews
Drain pineapple and save the juice. set pineapple aside. combine the sugar, cornstarch, orange peel, basil and pepper. gradually wisk in the pineapple juice. cook and stir until mixture boils and thickins. Cook the chicken, or you can use left over, in the microwave, or on the stove whatever you prefer, until done. cut into chunks or thin slices.
   Place salad on individual plates then some of the pieapple, then oranges and chicken. Drizzle with dressing then top with cashews.   WOW!!! I can taste it now.  The dressing is so good If there is any left I put it it in a jar and use it another day.  ENJOY
As we said Jan is working on the family tree and although she has lots of branches the tree still needs lots of work.  We have both worked on it and have done lots of work on the computer.  We have hit it lucky on Dicks side as he has a cousin that has worked for years on his side and we have just found another cousin that we didn't know about that took us back many generations.
