Heat coals separately. Prepare the Dutch oven. Unless the recipe says otherwise, lightly oil the oven with olive oil. You may want to cover the oven with at few layers of aluminum foil (for easy clean-up). Place slightly less than half of the coals under the Dutch oven (with meal inside) and the rest on top. (This ensures even heating.) If baking something in a separate pan inside the oven (e.g. a pie crust), you should place several 1" balls of foil along the bottom of the inside of the oven before placing the pan in it so that heat circulates evenly. To clean your Dutch Oven, avoid using water. Brush out the crumbs with a soft brush, rope, or sponge. Then use a little cooking oil to season the oven. You may want to rub a little salt in too. |
