Meatless Chili |
2 tsp. oil 1 clove of garlic, crushed 1 onion, chopped 3 carrots, sliced 2 celery stalks, sliced 1 green bell pepper, diced 1 red bell pepper, diced 1 c. corn 1 c. green beans (optional) ½ t. chili powder ½ t. cumin 1 t. oregano 2 cans kidney beans 12 oz. stewed tomatoes Heat oil in a large pot over medium heat. Add garlic, stir until golden brown. Add onions, carrots, celery, peppers, corn, and green beans. Saute until soft. Add spices. Add tomatoes and beans. Stir over medium heat until bubbly. Reduce heat and simmer for at least 45 minutes. Stir as needed. Serves 6-8. Serve with bread (required for your body to use the protein in the beans). |
