Green and blue hats are Wavy Rib. The spiral hat is a variation of Odessa, found here.
The Waffle Stitch hat is on top, the pastel variegated hat is knitted in Uneven Rib. The blue hat on the bottom is Seeded Rib. As you can see, there is not much difference between Uneven Rib and Seeded Rib. Chose whichever stitch pattern is easiest for you to knit.
