Chopped spinach 1 tsp olive oil 1 medium onion ¾ cup chopped 1 tsp bottled minced cgarlic 2 cups water 2 cans fat free chicken broth with garlic 1 can chopped tomatoes 1 teasp sugar 9 ounces of Portobello mushroom tortellini 3 Table sp of shredded parmesan cheese ¼ tesp ground black pepper ¼ tsp salt 1 egg Microwave the spinach on high for 5 mins to defrost. Heat oil in soup pot Add the chopped onion and garlic to pot, stir and cook for 1 minute till onion is tender. Raise heat to high and boil water. Drain spinsich, squeeze out excess water, add it to the pot Add tortellinini and bring pot back to boil. Mix the other incredgients in a separate bowl. When sould is cooked, drizzle in the egg ingredients. Stir and cook for 2 mins.
