Ingredients: Makes 1 large round loaf. Total time 2 1/2 hrs

3 3/4 Cups All Purpose Flour

1 2/3  Cup Spring Water

1/2 + 1/8 teaspoons Dry Active Yeast

2 teaspoons Salt

1 cup Biga (Starter) This equals 1/2 of my Biga Recipe. Click Here to go to my Biga recipe

Place all of the ingredients in your Bread Machine and set for "DOUGH ONLY". My bread machine will knead the dough and complete the first rising in 1 1/2 hours.  Once the dough has completed the first rising remove it from the bread machine and form a round loaf.and  place on floured parchment paper to and allow it to rise for around 1/2 hour our or until almost double in size. After rthe second rising has completed slice an X on the bread with a razor and  place in a pre heated 450 degree oven for around 30 minutes or golden brown and sound hollow when you knock on it.  Total Time 2 1/2 hrs

These big crusty wheels are perfect for eating with soups, stews and meat. In Puglia it is eaten with food of that region, greens, fish, cheese and fruit. You will need a good bread knife to cut through this wonderful rustic loaf.
