Ekadasi Recipes

Ekadasi is a fast day observed by followers of Vaisnava tradition on the eleventh day of both the waxing and waning moon, (roughly every two weeks).
The purpose of the fast being to minimize bodily activities and increase in activities of devotion, observers either abstain from food completely or omit all grains and beans from their diet that day. Light meals of fruits, milk products, vegetables, nuts and various non-ceral flours like banana, buckwheat (kasha), sago and tapioca are prepared and eaten by those not undertaking a total fast. On Ekadasi, the potato reigns supreme, and meals usually include wide varieties of tastes and textures without delivering the heavy bog-down feeling experienced after eating the same size meals cooked with grains and beans. Besides being a bi-weekly opportunity to become more absorbed in glorifying the Supreme Lord, Ekadasi is also an excellent time to purify the body.
