Pepperoni Pizza
                                                                            Moderate G.I.

YIELD: 8 SLICES

Oat Bran Pizza Crust
3/4 cup bottled marinara sauce
15-20 turkey pepperoni slices
1 cup shredded reduced-fat mozzarella cheese (or use half mozzarella plus half white Cheddar)
1/2 cup sliced mushrooms
1/2 small yellow onion cut into thin wedges

1. Prepare the crust according to the
recipe for Oat Bran Pizza Crust.

2. Spread the sauce over the crust to within one-half inch of the edges and top with the pepperoni.  Sprinkle the cheese over the top, then top with the mushrooms and onions..

3. Bake at 425°F for 12 minutes or until cheese is melted and crust is lightly browned. Slice and serve immediately.
