Rosemary Roasted Sweet Potatoes

These are REALLY good!  They go especially well with the
Steak on a Stick (Beef Kebabs)!


Yield:  6 SERVINGS


5 cups 1/4-inch thick peeled sweet potato slices (about 1-3/4 pounds)
1 teaspoon dried rosemary
1-1/2 teaspoon crushed garlic
1/4 teaspoon salt
1 tablespoon extra-virgin olive oil


1.  Place the potatoes in a large bowl.  Sprinkle with the rosemary, garlic and salt, and drizzle with the olive oil.  Toss well to coat.

2.  Coat a 9 x 13 inch pan with nonstick cooking spray and spread the potatoes evenly in the pan.  Cover with aluminum foil and bake at 400°F for  15 minutes.  Remove the foil and bake for 10 additional minutes.  Turn the potatoes and bake for 10 minutes more or until tender.  Serve hot.
