G.I. Rating is VERY LOW YIELD: 28 Appetizers However, we like to add chunks of onion and green pepper to these and make a meal out of them. They are wonderful served with the Rosemary Roasted Sweet Potatoes! 1-1/4 pounds well-trimmed beef top sirloin steak 2-3 tablespoons Zesty Herb Rub (below) 1 tablespoon extra-virgin olive oil 56 medium-small fresh mushrooms (we use less mushrooms and add onion and green pepper chunks) 28 six-inch skewers Olive oil nonstick cooking spray ZESTY HERB RUB: (Yield: about 5 tablespoons) 1 tablespoon dried oregano 1 tablespoon dried thyme 1 tablespoon lemon pepper 2 teaspoons garlic powder 2 teaspoons onion powder 2 teaspoons light brown sugar (I leave this out, personally) 1/2 teaspoon salt Combine all ingredients in a small bowl and stir to mix well. Apply (use 1 to 2 tablespoons per pound of meat) and grill, broil or roast the meat as desired. The rub will remain flavorful for several months, so make a double or triple batch and store in an airtight container to always have a supply on hand! 1. Rinse the meat with cool water and pat it dry with paper towels. For appetizers, slice the meat into thin strips (about 1/4 inch), and place the strips in a shallow nonmetal container. For a meal, I like to cut it into 1" square chunks instead. 2. Sprinkle the rub over the steak strips and toss to mix well. Drizzle the olive oil over the steak strips and toss again. Set aside for 15 to 30 minutes, or for more intense flavor cover and refrigerate for up to 24 hours. 3. Thread one mushroom onto each skewer. Then loosely thread a 3-4" steak strip onto the skewers followed by another mushroom. If you are making them for a meal, alternate a vegetable and a chunk of steak til you have the skewers relatively full with just a little space between each item. (If you are using wooden skewers, soak them in water for 20 minutes before using, to prevent burning.) 4. Coat a large broiler pan with nonstick cooking spray and arrange the skewers on the pan. Spray the skewers lightly with the olive oil cooking spray and broil for about 8 minutes, turning occasionally, or until the skewers are nicely browned and the steak is done. (Alternatively, grill the skewers over medium coals for about 8 minutes.) Place on a serving platter and serve hot. When we make these with more veggies and the 1" square beef chunks, we use our stove top grill (George Foreman or similar) and cook for 4 minutes, give 1/4 turn, and cook for 4 minutes more..
