MAMA DUCK FLAVOR |
SEASON PACKET: caramel powder, star anise powder, cinnamon powder VEGETABLE PACKET: none OIL PACKET: palm oil HERBY PACKET: not listed in the ingredient list. I did detect some lemon grass in the mixture. SPICYNESS: 4 COMMENT: Very spicey. The broth tastes like chili pepper and cinnamon. Which don't go together to well. I don't detect a duck flavor or any other meat flavor. The noodles are thin and brittle. I don't recommend this ramen Overall: 2 |
MAMA CHAND CLEAR SOUP |
Season Packet #1: salt, garlic powder, monosodium glutamate *note-season packet did contain green onion which was not listed in the ingredient list Season Packet #2: palm oil Season Packet #3: chili powder Spiceyness: 4 Comment: This is quite a tasty ramen. The noodles are of the ribbon style. The broth is quite spicy and has a clear look. There is a greasy look to it, due to the palm oil packet. But, the broth is very flavorable. I would have liked some more vegetables, but still this ramen is delicious. Overall: 4 |
MAMA PORK FLAVOR |
Season Packet #1: salt, sugar, leek, pepper powder, garlic powder, monosodium glutamate Season Packet #2: palm oil Season Packet #3: pork flavour Season Packet #4: chili powder Spicyness: 3 Comment: A whopping 4 season packets! Not sure what exactly "pork flavour" is. Maybe I don't want to know. The broth is quite tasty. There's a baconish flavor to it. The chili powder provides a little heat. Again for Mama ramen, the broth does have a greasy texture to it. Overall: 4 |
MAMA YENTAFO |
Season Packet: fermented soy bean curd, leek, monosodium glutamate Season Packet 2: chili powder Oil Packet: palm oil Spicyness: 4 Comment: The season packet contained red crystals, and when mixed with water gave the broth a reddish tint. It even turned the noodles red. The broth has an odd taste. Not too good. Mostly the heat of the chili powder overpowers the broth. Overall: 2 |
MAMA PAD THAI |
Season Packet: salt, sugar, artificial shrimp flavor, fried shallot, citric acid, leek, monosodium glutamate, disodium 5 inosinate, disodium 5 guanylate Season Packet 2: chili powder Liquid Packet: palm oil Spicyness: 3 Comment: This ramen uses rice noodles and you drain the liquid off after they are soft. I did leave a little water to help mix up the seasonings. My first impression was sweet and sour after the first bite. I detected a little bit of a fishy taste and the spicyness blended in nice. Even with the additional oil packet this ramen didn't seem oily. A good ramen from MaMa. Overall: 5 |
MAMA INSTAND CHAND NOODLES BEEF FLAVOR |
Soup Base: salt, sugar, pepper, garlic powder, beef flavor, monosodium glutamate, disodium 5 inosinate, disodium 5 guanylate Oil Packet: wasn't listed in the ingredient list palm oil maybe? Spicyness: 2 Comment: This ramen looks like rice noodles to me but the packet claims they are made of flour. Regardless this is a kick butt ramen. The broth is a dark brown color with a nice "beefy" taste. A little bit of spicyness adds a touch of heat to the palate. A great ramen from Mama. Overall: 5 |
MAMA CHICKEN FLAVOR |
Season Packet: pepper powder, garlic powder, monosodium glutamate, salt, sugar, artificial chicken flavor Oil Packet: not listed in ingredient list, probably palm oil Chili Packet: was not listed in ingredient list, looks like powdered chili Spicyness: 3 Comment: Thats one ugly looking chicken leg on the package. As is the norm with imported ramen, a lot of the ingredients were left out of the listing. The broth was extremely greasy and had a slight chicken flavor. The addition of the chili spiced things up a bit. Overall a slightly bland broth. Overall: 3 |
MAMA CHAND CLEAR SOUP |
Package size: 1.93oz/55g Soup Base: salt, monosodium glutamate, garlic powder, pepper Spice Packet: chili powder Oil Packet: palm oil Spicyness: 5 Comment: The ingredient list has yet again left off a lot of the ingriedents. This ramen appears to be made by the same company that makes ramen for the Mama brand. The noodles are a wide flat variety made from rice. The broth was clear but after the first bite you knew that this was going to be spicy. An intense spicyness was all I could taste at first so much that it overwhelmed the flavor of the broth but after a few seconds a salty garlic flavor could be detected. Not much in the way of veggie a bits of green onion. Overall not bad except for the spicyness was just a little to strong for such a simple broth. Overall: 4 |
MAMA RICE NOODLE MOO NAM TOK FLAVOUR |
Package Size: 1.930z/55g Soup Base: salt, sugar, artificial pork flavor, celery, chili powder, soy sauce powder, monosodium glutamate, disodium 5' inosinate, disodium 5' guanylate Oil Packet: palm oil Spicyness: 3 Comment: Mama seems to have updated the look of their ramen packaging compared to some of my earlier reviews. The pictures actually make the ramen look pretty delicious. This flavor is made of rice noodles and a pork flavor broth. The broth had a nice meaty taste with a little spicyness in the background. Not sure of the accuracy of the ingriedent list but the oil packet added some additional flaovr, I'm just not sure what exactly is in it. The noodles were chewy and held up well in the broth. Mama has defintely improved the quality of their ramen. Overall: 5 |
MAMA KIMCHI FLAVOR |
Package Size: 3.17oz/90g Soup Base: salt, sugar, spices, monosodium glutamate, miso powder(soybean, salt), fat powder(glucose syrup, hydrogenated palm oil, caseinate), citric acid, caramel powder, kimchi flavor, paprika oil, disodium succinate Spice Packet: chili powder Dehydrated Mix: cabbage, shitake mushroom, leek Spicyness: 5 Comment: Normally you think of a Korean ramen company making kimchi flavored but Mama is based in Thailand so I am quite eager to see how they will stand up against the giants of Nong Shim and Samyang. Right from the start the broth has an intense spicy aroma. The flavor was spicy with a slight sourness in the background. Of course a salty flavor was also in the mix. I was sweating when eating this one. But what an incredible flavor. The pieces of cabbage and mushroom added a lot of flavor and texture also. This has to be Mama's finest ramen I have ever had!! This may be even better than Nong Shim or Samyang. Overall: 5 |
