Woody's Sunday Treat

(Halibut Quiche)

Wayne (Woody) Woodhead. Wayne was an avid hunter and both a sports and commercial fisherman so fish and game were plentiful in their home. Woody was my brother-in-law. This was Woody's original recipe he often made for Sunday Brunch.
1/2 cup mayonnaise
2 Tbsp. all purpose flour
2 eggs beaten
1/2 cup milk
2 cups flaked halibut (boiled and drained)
1/3 cup chopped green onions
1 Tbsp. finely chopped parsley
2 cups shredded Swiss cheese
1 unbaked pastry shell
Combine mayonnaise, flour, eggs and milk in a bowl. Gently stir in halibut, onion, parsley and cheese. Spoon into the pastry shell and bake at 350 degrees for one hour. Ella (maiden name Ella Oskolkoff) is my sister-in-law and one of Agrafena's children. Woody was an avid hunter and fisherman providing the family with many of our traditional foods.
