Delightful Pumpkin Cookies

Baking time approximately 15 minutes until golden brown

Oven 350

Cream together:

1/2 cup shortening

1 cup white sugar1/2 cup brown sugar packed

Add and beat well:

1 tsp. baking soda

1 tsp. Cinnamon

3/4 tsp. Cloves

1/2 tsp. Nutmeg

1 tsp. Salt

2 eggs

1 cup pumpkin from a can (or use mashed yams, fresh mashed pumpkin, or mashed carrots if you are really health minded)

Slowly add while beating:

3 cups flour

When well blended add and mix well:

1 cup raisins (or other dried fruits chopped to the size of raisins)

1/2 cup or more of coconut optional but I use it

1 cup or more chopped nuts such as walnuts or pecans

1 cup (I use half a bag so I can make more cookies later) butterscotch chips (chocolate, white chocolate or peanut butter also work well)

Grease a cookie sheet and drop by teaspoons full.

Glaze with Maple Frosting

2 Tbsp. melted butter

Add:

1 cup powdered sugar

2 Tbsp. Milk

1/2 tsp. Maple flavoring or (Mapeline)

If glaze starts to harden just warm in the microwave. You may dip tops of warm cookies or paint with a brush. Glaze will harden on cookies and if the cookies get chilled just use warmed up glaze. You may serve cookies without the glaze but they are not as delightful!
