A traditional Scandinavian Holiday cookie. Be sure to make a double batch as they disappear fast.
1 cup butter
½ cup sugar
2 beaten egg yolks
2 cups flour
2 hard boiled egg yolks smashed fine
1 tsp. vanilla
granulated sugar
2 lightly beaten egg whites
Cream butter, add beaten egg yolks and sugar blending well. Add the hard boiled egg yolks, flour and vanilla and mix well. Chill dough for a short time. Roll out and cut into 2 inch squares or desired size. Dip top of each square in beaten egg whites and then dip in granulated sugar. Bake at 350 degree oven until light golden brown. You must be careful because the cookies taste bad if they are under cooked. Remove from oven and let set until you can remove cookies without breaking. If you leave them too long they will be hard to remove.
