Festive Acorn Squash
Use the longest acorn squash you can find. You may want to use a pumpkin slicer/carver but slice into 1 inch thick rings. Clean out seeds and membranes from the rings. Cover a large jelly roll pan with foil and butter the foil. Place rings on the foil. Bake at 350 degrees until they start to tenderize. Mix melted butter, brown sugar, cinnamon, pinch of salt and a few Tbsp. concentrated frozen orange juice together. Spread on rings and continue baking until a glaze forms and it begins to brown. It's good and it's pretty.
