HUGHES FAMILY "POTPIE" RECEIPE
A GREAT WINTER TIME MEAL
(Pennsylvania Dutch origin)
- THE NOODLE
- 2c. Flour
- 2 eggs
- 4 egg shells of water
- salt 2 dashes
Mix ingrediants, roll out on a floured board, and cut into strips (1"x3")
- THE POT (6qt)
- Ham Bone (leave some ham on bone)
- 5 qt. Water
- 1 Onion
- 2 Bay leaves
- Pepper
Bring to boil until pieces of ham fall off the bone.
Remove bone from pot.
Drop in noodles.
Cook till tender.
Thicken juice with a little flour and water paste.
Before the noodle is totally cooked, add in chucks of potatos.
One medium potato per serving.
Simmer for approximately 30 minutes.
My mother "Edna Gladys Hughes used to stretch this receipe by adding hot dogs on the side.
Best served with a green salad. Prefered dressing is Italain.
