                                      Sweetened chili sauce

20 red chiliis, medium sized, seeds intact
5 bird's eye chili (Small chilis that are hugely spicy. Might wanna tone

this down if ya family can't take spiciness)
5 table spoon heaps of plum sauce
1 tea spoon sugar
3 teaspoon salt
1 lime leaf, cut into strips
1/4 cup water

1) Pound chillis and lime leaf until fragrance is released and add water
as
you pound until it looks like a paste.
2) Bring remaining water to a boil and all all ingredient including
pounded
paste of chili. Mix well.
3) Keep in bottles. Keep refrigerated. Not to be kept more than a month.

    Rabbit Stew

2oz butter
2-3lbs of rabbit,depending on the amount of bone
1lb washed and trimmed leeks
4 cloves of garlic,finely chopped
6oz pot barley
3 3/4 cups water
3 generous tablespoons of red wine vinegar
2 bay leaves,salt,and pepper
15 fresh,chopped sage leaves or 1Tbs dried sage

Melt the butter in a heavy pan and fry the meat,leeks, and garlic until
the vegetables are slightly softened. Add all other ingredients except
Sage and bring the pot to a boil, cover and simmer gently for 1 to 1 1/2
hours or until the rabbit meat is falling from the bone. Add sage and
continue to cook for several more minutes. Season as desired and serve.

   Pico de Gallo

2 ripe medium tomatoes, peeled and finely chopped
2 tblspoons finely chopped red onion
2 tblspoons snipped fresh cilantro
1/8 tspoon salt
Dash of Sugar

Directions:
Combine the tomatoes, red onion, cilantro, salt and sugar. mix well.
Cover: chill in the icebox for at least 2 hours or overnight.

makes about 1 1/4 cups (20 1tblspoon servings)

                                  Coffee for Coffee haters!

This is for all those, like me, that hate coffee but feel they should
like it at their age.
You will need:

1 pot of coffee
1 package of hot coco
1 can of whip cream
1 big coffee mug
1 chocolate/french vanilla creamer

Brew a pot of coffee (4 cups for starters you dont want to waiste to
much if you dont like it) Poor  full in the big mug  Next take 1 package
of hot coco mix and add to the coffee. Put whip cream on top and mix
until everything is just liquid (no whip topping look, its for taste)
add the creamer of choice until mug is full. Mix again.
See if that doesnt help you like coffee!
