2 pkg.                  active dry yeast (rapid rise is fine)
1 tsp.                   salt
1-3/4 c.                water (luke warm)
1/3 c                    honey
1/4 c.                   melted butter
2 lrg.                   eggs

                                      -------------GLAZE-------------

1 tbl.                  water, 1 egg white (mix these two)
2 tbl.                  Oat bran to sprinkle on top *can sub sesame/rolled oat

In a large bowl stir together luke water & honey, add yeast. Stir to dissolve. Sitr in oats. Let mixture stand for 15 min. Add oil or butter and eggs and salt, mix very well and let rest 3 min. Adding one cup of flour at a time, mix in flour until dough comes away from the bow. Flour a surface and knead bread, using all remaining flour. Knead about 8 min.
Be sure to use all your flour!
Place the dough in a well oiled bowl and turn to coat. Cover w/plastic or damp kitchen towel. Let rise in a warm dry place until doubled or 45 min. Punch down dough. Divide dough into equal halves. Shape dough to fit the bread into lightly oiled bread pans. Let rise for 30 min.
Place oven rack to the lower third of the oven.
When dough is ready, prepare eggwhite and water mix, then make a slit down the center of each loaf, from end to end. Brush tops and inside the slit with the egg mixture and sprinkle w/oat bran, regular oat or sesame seed.
Bake at 375 for 35 min (if using a baking stone) 40 min in bread pans.

Cool on a rack for at least min and remove onto a rack to cool completely.

*You may divide the dough up before the first rise and freeze 1/2 for later cooking.
