This is going to be my fun page. I love creative cooking. Meaning my poor dad ate alot of bad stuff till I got it perfected.*S*
If your watching your diet then you have come to the right page. You can just watch it grow & grow day by day.I'm sorry I just have a thing for good food.The richer the better. I know your thinking "Grrrrrr, I hate it already" . Stick with me , just because I might use real butter or cream I don't think it will be to bad to add your substitutes.*S*
I'm going to include a recipe that is a 100 yrs. old and comes from a old country inn in Penn.
I'm going to have some pasta recipes and dessert recipes as well as a recipe called angel food candy. I hope you will enjoy this page because I am going to have fun with it.
Chicken Ranchero (for two)
2 Boneless,skinless chicken Breast..... 1 3/4 Cups Salsa....
1 onion ,....
1 cup low fat mayo....
1 green pepper....
1 pkg.dry Itallian dressing mix....
Take two large pieces of tin foil , spray with non stick pam. Cut up chicken into bite size pieces divide between the 2 pieces of tinfoil.Cut up onion into large chunks and put over chicken. Do the same with the green pepper. pour salsa over each serving. Mix together the mayo and the dressing mix. pour over the top of each serving. Seal the foil tightly and place on cookie sheer. Place in a 350 degree oven and bake for 1 and a 1/2 hours. You can eat right from the foil or if you have guests place each serving on a dish.*GRIN* Serve with hot corn tortias and a salad.
Broiled Red Snapper....
Amount of fish for your need....1 cup low fat mayo....1/2 cup lemon juice....lemon pepper to your taste....If you like you can add 1 pkg. Itallian dressing mix....1/2 tsp. dill weed seasoning....1/2 tsp.beaumonde(spice island) if you can get it. Spray your broiler pan with Pam....possition fish on pan Mix all the ingredients and brush on one side of fish.Broil on one side for 5min. turn and brush mixture on this side and broil for another 5 min. Time really depends on the size of fish being used. just test for doneness.
You can do several types of meats this way. Just change your spices and herbs. For beef it is real good to add Kitchen Bouquet to the mayo. The purpose besides flavor with the mayo it seals the natural flavor and juices in.
String Pie.....
8oz. Spagetti.......... 1lb. Ground round...1-Onion chopped.....
1/4 C. chopped green pepper....15 1/2 oz. Spagetti sauce......
1/3C.Grated parmesan cheese....2 eggs beaten.... 2tsp. butter...
1 C. cottage cheese....1/2C.shredded mozzarella...
Cook pasta according to pkg. directions.Preheat oven to 350 degrees. Brown beef add onions and green peppers in lg. skillet, over med.high heat until meat is browned. Drain drippings. Stir in spagetti sauce, mix well. In lg. bowl combine spagetti , parmesan cheese, eggs, & butter, mix well. Place spagetti in bottom of a well greasebaking dish or pan. Spread cottage cheese over top. pour sauce mixture over the top of that. Sprinkle mozzarelle over the top of everything...
Bake 20 min. or until hot and cheese is melted...Serve with tossed green salad and garlic bread. You can also sprinkle a little dry ranch dressing over the garlic bread and add shredded cheddar cheese and broil till cheese melts....
Fried Cabbage and Brauts
One head of cabbage.....1 onion....Lipton onion soup mix or Itallian dressing mix......1 1/2 tbsp. caraway seeds......
In large fry pan or dutch oven put in bacon dripping or a little crisco.... cut up cabbage and put in pan....add onion an seasonings , and caraway..... cook till desired consistancy and add brauts on top of cabbage and cook till hot....
Serve with garlic cheese bread and a potato of some sort....
Pumpkin Bars....
4 eggs......2 C. sugar........ 1 C. oil .......2 C.pumpkin.....
2 C. flour..... 1tsp. Salt..... 2tsp. baking soda.....2tsp.cinnamon.....1 C.chopped walnuts.....
Combin eggs , sugar and oil in large bowl, beat well and blend in pumpkin. Add flour,salt,soda and cinnamon, mix well and add walnuts. Pour mixture into well greased jellyroll pan or cookis sheet. Place in a 350 degree oven for 25 to 30 min.
You can make your own or buy ready made Cream cheese frosting. This makes a lot and you can freeze half. Or if you have bible study or some other group meeting you can serve this. Its really great. tastes alot like carrot cake....
Cream Cheese Cake...
1 and a 1/4 C graham cracker crumbs... 1/2 C. butter melted....3Tbsps. sugar....
Mix all ingredients. Line a buttered 8x8 pan with mixture.....
Filling
2- 8oz. pkg.cream cheese....2/3 C.sugar....1tsp.vanilla.....
3eggs......
Add all ingredients and mix till smooth.( A mixer works ok but don't use a food processer, it breaks down the cheese to much and it won't firm back up...)pour into crumb lined pan. Bake at 375 for 25 min.(you can test like you do custards.) Let cool for 15 min.
Topping
1/2 pt. sour cream...1 and 1/2 Tbsp. sugar.....1/2 tsp.vanilla
Mix all ingredients. Spread over top of cake,bake at 475 for 4 min. Refridgerate over night. Yields 10 -12 servings.
Just before serving you can add berries or lemon filling over the top. This is so easy a cake and so goooodddd.

Shoofly Cake.....
2 1/2 cups flour....3/4 cups sugar....1 tsp. baking soda......1/2 tsp. salt....1/2 cup shortening....1 cup boiling water...1/2 cup light or dark molasses.....
The mixing on this cake is done all by hand. If you use elec.mixer it won't turn out.....
In mixing bowl add flour, sugar and salt... Cut in shortening till mixture looks like fine crumbs...Remove 1/3 cup of the mixture and set aside...Stir together water and molasses add to crumb mixture in bowl.stir just until blended. You don't want to over mix this recipe.....
Pour batter into grease 8" pan sprinkle with reserved crumbs over the top.... Bake in 350 degree oven for 25 to 30 min.
Serve warm /with whipped cream ( cool whip) *S* Or ice cream...
To me this tastes just like ginger bread . It is a great dessert. But, Most be sever warm.
This next recipe is a jewel. It is so simple and never fails if you follow all instructions carefully.
Coffee Can Bread:...
I pkg.dry yeast....1/2 cup warm water....1/8 tsp. ginger.... 3Tbsp.sugar...2 eggs well beaten....1 can evaporated milk....1 tsp.salt.... 3 Tbsp. salad oil.... 4 to 4 1/2 cups flour. I sometimes add caraway to this recipe and sometimes replace ginger with cinnamon.....
Dissolve yeast in warm water with 1 Tbsp. of the sugar in a lg. mixing bowl.....blend in ginger and let stand in warm place for 15 min....
Add remaining sugar, milk, salt,oil and eggs....Mix at low speed on mixer. Add one cup of flour at a time. The last mix by hand.....Make dough stiff but sticky......
Put into lg. greased coffee can... let rise till it pops the lid off the can......Bake 350 degrees for 45 to 50 min....
I love this recipe. You don't have to knead it or work with it at all. I have never had this recipe fail. Also after it rises you can dump it on a floured surface and knead a little and pat out patties and deep fry it. This is really great with whipped honey butter. Or with butter and lots of honey....Fried bread ,to my family is a real treat.
Here is a recipe that will sweeten the devil in all of us.....
Angel Food Candy......
1 Cup sugar....1/2 Cupbrown sugar....1 1/2 Cup dk. Karo syrup....2 Tbsp. vinegar...cook to 300 degrees on candy therm.....
Take from heat and add 2Tbsp.baking soda.... Place in well greased 13x9 cake pan... Let cool then take out of pan an break into pieces and coat in melted chocolate with a little parriffin in it.... If you like sea foam candy you will love this......
