Ingredients

3 Kg Extra Pale Malt Extract

1 Kg Orange Blossom Honey (2 jars)

250 gms Crystal Malt

1.5 oz Halletauer Hops

1/2 Whirlfloc Tablet

11.5 gms packet Safale S-04 Ale Yeast

 

Method

Heat 3 litres of water to 65-70 deg Celsius add Crystal Malt

Let steep for 20 mins

At the same time, boil hops in 2 litres of water for 20 mins

and boil honey in saucepan to kill off any wild yeasts

Strain grains and hops into fermenter, sparge with cold water

Warm malt extract, add to fermenter

Add honey and Whirlfloc tablet

Top with warm/cold water to make 23 litres at about 22-30 deg C

Measure Specific Gravity

Pitch Yeast

Taste Test - This beer turned out to be relatively sweet tasting, but as the sugars should have been turned to alcohol, it was probably just the strong residual honey flavour and lack of extra bitterness from the small quantity of hops used that gave it that impression

I would classify this among the fruit beer range as it has a distinctive, if not novel, flavour that would go with a less savoury range of food
