We really took a liking to this brew - strong flavour at first but mellowed with age

So we made some more

 

Second Batch

Started 3 May 99 

Bottled 16 May 99

 

Ingredients

2 Kg Amber Malt Extract

1 Kg Dark Malt Extract

250 gms Chocolate Malt

150 gms Black Patent Malt

125 gms Crystal Malt

60 gms Cascade Hops

28 gms Saaz Hops

Saflager S23 Yeast

 

Method

This is the first beer we had made from scratch without a starter can of goo

Start yeast in water with 1-2 tbspn Malt Extract

Add grains to 3 litres water bring to boil then simmer 30 mins

Remove grains and add malt extracts, honey and 30 gms Cascade Hops

Simmer for 45 mins

Add remaining 30 gms Cascade Hops and simmer for another 10 mins

Remove from heat and add Saaz Hops

Steep for 5 mins - strain into fermenter

Top with cold water to 26 - 30 C

Pitch Yeast

Analysis

Very active bubbling for 2 days then rapidly slowed almost to a stand still

Tasted very smoky at bottling (caused by Patent Malt)

and somewhat like a medium strength stout without the strong Chocolate Malt background

Don't recall the original Voodoo tasting that smoky

(can't compare it because Voodoo is not available in Australia)

A few months down track and the beer is great - really mellowed out but still a strong 'to be acquired taste'

It's now one of our favourite beers - so much so we have made a second brew exactly like the first
