Indian Recipes for Cooking Stir-fried Spinach with Cottage Cheese
INGREDIENTS
- 1 kg spinach (palak)
- 400 gm cottage cheese ( paneer recipe)
- 4 tbsp oil
- 5 gm cumin (jeera) seeds
- 10 gm garlic cloves
- 2 whole red chillies
- 1/2 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp red chilli powder
- Salt to taste

To prepare:
- Blanch spinach, drain and chop coarsely
- Cut cottage cheese (paneer) into cubes
- Heat oil in a wok (kadhai)
- Add cumin, garlic and saute till garlic changes colour
- Add in whole red chillies, stir for 1/2 min
- Add spinach, stir-fry adding coriander powder, cumin powder and red chilli powder
- Add cheese and stir-fry for 5 mins
- Season with salt
TIP: Serve hot, accompanied by steamed rice and Mixed Vegetable Raita
