Indian Recipes for Cooking Stir-fried Spinach with Cottage Cheese

INGREDIENTS

  • 1 kg spinach (palak)
  • 400 gm cottage cheese ( paneer recipe)
  • 4 tbsp oil
  • 5 gm cumin (jeera) seeds
  • 10 gm garlic cloves
  • 2 whole red chillies
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp red chilli powder
  • Salt to taste

To prepare:

  • Blanch spinach, drain and chop coarsely
  • Cut cottage cheese (paneer) into cubes
  • Heat oil in a wok (kadhai)
  • Add cumin, garlic and saute till garlic changes colour
  • Add in whole red chillies, stir for 1/2 min
  • Add spinach, stir-fry adding coriander powder, cumin powder and red chilli powder
  • Add cheese and stir-fry for 5 mins
  • Season with salt
TIP: Serve hot, accompanied by steamed rice and Mixed Vegetable Raita
