Salad Dressing

Margarets Best

Wildwood Lodge borrowed this recipe and called it Moms Best.Selling it at the time at their daughters store in Mar.Original recipe from My Mother-in-law.

1 cup oil

1 cup white sugar

1 can tomato soup

1/2 cup vinegar

1 tsp salt

1 tsp celery seed

1 med onion chopped fine

1 dash garlic powder

put in oil last slowly add with rest in blender going slow

you are going to love it!!!!!!!

 

Veronas Salad Dressing

(makes 1 quart)

2 cups white sugar

8 tsp dry mustard

12 tsp flour

3 eggs

2 cups vinegar

2 cups water

mix dry together in top of a double boiler

in a separate sauce pan heat vinegar and water to near boiling

add eggs to dry ingredients

beat well

add 1/4 of heated mixture to double boiler and stir in well

pour in remaining hot mixture and stir until thickened

Remove from heat add 1 small tsp of salt and 1 lump butter

Store in glass containers

TO USE mix half and half with carnation milk

(my brother in law Bob can't get enough of this)

These recipes won't be in order as I have old books to go through that are almost falling apart.I hope they are enjoyed though!

 

Wartime Cookies

1 pkg sheriffs butterscotch pudding desert

cream with 1 cup shortening

add a egg that has been beaten

1 cup fine oatmeal

1 cup flour

1 tsp baking powder

salt (pinch? doesn't say)

Roll into balls and pat out with fork dipped in cold water

Bake in moderate oven

Sunshine and shadow,

Laughter and gloom;

It's all in a lifetime,sun, shadow and pain;

There's never a rainbow till after the rain.

Green Tomato Mincemeat

8 quarts green tomatoes

2 lemons

3 pound brown sugar

2 pound seeded raisins

1 tsp allspice

1 tblsp cinnamon

1 tsp ginger

1 tsp mace

1 tblsp salt

2 tsp ground cloves

1 cup vinegar

Scald and peel tomatoes and put through food chopper with lemon rind(having first squeezed out juice)Add other ingredients and cook about 45 minutes.

Coconut Dreams

1 cup flour

1/3 cup butter

1 tblsp brown sugar

1/4 tsp baking powder

Cream the butter- add brown sugar-and cream -add flour sifted with baking powder . Pat in thin layer in greased pan(about 8x8).Bake until light brown.

1 cup brown sugar

1/4 cup dessicated coconut

1/2 cup chopped nuts

2 eggs

Mix these ingredients and pour over partly baked cake.Return to oven and bake until brown.

Cocoa Fudge

2 cups white sugar

2 cups brown sugar

1/2 cup corn syrup

1/2 cup milk

Boil 3 minutes. After it starts to boil add 3 tsp cocoa, a little butter. Boil 5 minutes. Let cool .

Maple Cream

4 cups brown sugar

2 tblsp flour

2 tsp baking powder

1 cup cream

4 tblsp butter

few grains salt

mix ingredients together stirring constantly until it forms a very soft ball in water. Add tsp vanilla and beat. Add nuts if desired.

Divinity Fudge

2 cups white sugar

1/2 cup corn surup

1/2 cup water

Boil real hard until it forms a hard ball in water.beat 2 egg whites stirring syrup over.Add 3/4 nuts and pour on buttered pan.

Chocolate Pie

1 1/2 cups milk

1/2 cup white sugar

butter size of walnut

3 large tblsp. grated chocolate

yolk 1 egg

3 tblsp corn starch

1 tsp vanilla

Place milk, sugar and butter on stove .When hot add chocolate.When boiling add corn startch , egg yolk and vanilla.Pour in baked shell. Cover with one beaten egg and 1 tsp sugar.Brown in oven.

Coconut Cream Pie

2 cups hot milk

3 tblsp corn starch

1/2 tsp salt

1/3 cup sugar

1/4 cup cold milk

2 eggs

2 tsp butter

3/4 tsp vanilla

1/2 cup shredded coconut

Mix cornstarch sugar and salt with cold milk Stir and cook in double boiler until thick.Cover and cook 20 min longer. Beat yolks of eggs and gradually add.Cook 3 minutes. Remove from heat and add butter, vanilla, and coconut.Meringue ---Beat your 2 egg whites until stiff , add 2 tblsp white sugar. Spread over filling sprinkle some coconut on top. Brown in oven.

Fruit Drops

1/3 cup butter

3/4 cup fine granulated sugar

1 egg well beaten

1 tsp grated orange rind

2-1/2 tblsp orange juice

1/4 tsp almond flavoring

1 1/2 cups sifted pastry flour

1/4 tsp baking soda

1/4 tsp salt

1 cup seedless raisins

1/4 cup chopped walnuts

Cream butter, add sugar gradually, cream well, add egg, beat well, then add orange rind, juice, and almond flavoring. Add sifted dry ingredients and raisins.Combine well. Drop by tsp on buttered baking sheet. Bake at 350 for 12 to 15 minutes. yield 3-4 dozen cookies.

Pecan Balls

1 cup butter

2 cups sifted pastry flour

4 Tblsp fruit sugar

1/2 tsp salt

3 Tblsp cold water

2 tsp vanilla

2 cups chopped pecans

Cream butter, add sifted dry ingredients,mix well.blend in cold water and vanilla.Add nuts and mix thoroughly.Roll into small balls.Place on buttered baking sheet. Bake at 300 f for 40-45 minutes. While still warm roll in fruit sugar.Makes 4 dozen.

Back to the salads!! We went to Toronto and had a great meal with the nieces and nephews. Becky sent some of her recipes to me as they were great. Kevin can sure entertain.

 

Spinach Salad with Strawberries and Sesame and Poppyseed Dressing

Dressing

1/4 cup sugar

1 tbsp poppy seeds

2 tbsp sesame seeds (toasted)

11/2 tsp chopped onion

1/4 tsp worcestershire sauce

1/4 tsp paprika

1/2 cup vegetable oil

1/4 cup cider vinegar

Shake ingredients together in thghtly covered jar.

Salad

1 lb. fresh spinach washed dried and torn in pieces

1 pint of fresh strawberries hulled washed and sliced

1/2 cup slivered almonds

combine ingredients

Pour dressing over salad

Pasta salad with sweet peppers and dill

3 1/2 cups ratina pasta

1/4 lb. snow peas

3 cups cauliflower in small pieces

1 cup thinly sliced carrots

2 sweet peppers chopped (red, yellow, green, or purple)

2 green onions chopped

1/4 cup chopped fresh dill

Dressing

2 cloves garlic minced

1/3 cup red wine vinegar

1 tbsp white sugar

1/3 cup corn oil

3 tbsp water

salt and pepper

Cook pasta 2 minutes for fresh and 5 minutes for dry ( tender but firm) drain and rinse

Blanche snowpeas or green beans in boiling water for 2 minutes

In large bowl combine cauliflower, carrots,peppers,green onions, dill, snow peas and pasta, toss to mix.

Dressing

In food processor or bowl combine garlic, vinegar, and sugar. Mix well. Gradually add oil and water, mix well. Pour over salad and toss to mix. Add salt and pepper to taste. Makes 10 servings of 1 cup each.
